Chocolate Covered Dates
Ingredients:

10 Medjool dates (pitted)

100g dark chocolate (70% or higher), melted

1 tsp coconut oil (optional, for a smoother coating)

2 tbsp almond butter or peanut butter (for stuffing)
Topping Ideas:

Crushed nuts (almonds, pistachios, hazelnuts)

Drizzle of extra almond butter
Instructions:

Pit the Medjool dates if they aren’t already pitted. Slice them open and stuff with almond butter.

Melt chocolate with coconut oil until smooth.

Dip each stuffed date in melted chocolate, coating fully.

Place on parchment paper and sprinkle with toppings.

Refrigerate for 15 minutes until set.
