Lotus Xanthan Gum is a thickener and binder that can be used in gluten-free baking. It is high in soluble fibre and unlike other gums, is very stable under a wide range of temperatures.
Xanthan gum is a polysaccharide with many industrial uses, including as a common food additive. It’s also a thickening agent, emulsifier and stabiliser that prevents ingredients from separating.
