Verjus is made by pressing unripe grapes to make a versatile acidulant. The juice is not fermented but kept as a light and versatile ingredient perfect for light dressings, deglazing a pan, poaching, and marinades. It has a really clean and light flavour, so it is a wonderful addition to your dressing pantry.
Light, lovely, and simple, this dressing works well with salads that have charred stone fruits, avocado, or grilled seafood. It is also wonderful in an Autumnal compote of fruits of the season.
Vejus combines particularly well with nut oils for dressings. It will enhance any fish, chicken, game, vegetable or fruit dish. Ideal for deglazing a pans and reducing to a syrup when having some wine with a meal. Try adding verjus to still or sparkling water to give an extra spritz.
